Cloves is an aromatic flower that is known for its bitter, warm flavour and health benefits. This spice gives a unique twist to dishes from savoury stews to sweet treats. Origin:

Cloves were found in the island of Maluku also known as indonesia. This region of fertile soil and humid area create an atmosphere where the cloves can grow. This spice has a long story that actually dates back to the time where people in China needed to eat a glove to freshen their breath to speak with the emperor.

Arab traders were the first people to sell cloves to European countries, it was a sought and valued spice for their medical properties and culinary uses. The Portuguese and Dutch eventually took possession of this trade since they found it advantageous and profitable. They started cultivating cloves in other countries, and regions such as Zanzibar and Madagascar to meet the growing demand. 

The French were the first colony who brought cloves on this island as they deemed the climate, atmosphere, and fertile land of Mauritius appropriate for the cultivation of cloves. Mahe de la bourdonnais initiated the cultivation of other spices including cloves in hope of bringing and shaping the economy of the island. Even when the British took over Mauritius they recognized the importance of spice cultivation and supported this project.

Culinary Applications:

As mentioned in other articles such as “ Essential spices”, “Cinnamon”, “Massala”, cloves can be used in biryani, curries, or to make a “rougaille” which is tomato based sauce that can be used with sausages, fish, chicken, egg. Cloves are added to this sauce as its spicy touch adds an amount of complexity in the dish.Cloves can also be used in recipes of traditional sweet treats, for e.g. In gato Zinzli, Greo, or even in syrup that accompany desserts such as pouding.
